Creamy Orzo Pasta with Roasted Butternut Squash & Spinach 🎃🌿 | A Cozy Delight
Roasted Squash: • 12 oz butternut squash (cubed) • 1 tbsp olive oil • Salt, pepper, 2 tbsp fresh thyme Orzo: • 1½ cups orzo • 5 garlic cloves (minced) • ¼ tsp smoked paprika • 1 tbsp olive oil • 2½ cups chicken stock • 5 oz spinach • ½ cup heavy cream Instructions: Roast squash at 400°F for 20-30 mins with oil, thyme, salt, and pepper. Sauté orzo with garlic, paprika, and oil; add stock and simmer until tender. Mix in spinach, cream, and seasoning. Fold in roasted squash and serve warm!
