Pumpkin Scones | Pumpkin Scones 2 1/2 cups Flour, all-purpose 1/2 cup Brown Sugar, I used Splenda Zero Sugar 2 tsp. Pumpkin Pie Spice 2 tsp, Cinnamon 1/2 tsp. Nutmeg... | By Delicious by Debbie | Thank you for joining me on Delicious by Debbie. I'm getting ready to bake some pumpkin scones. I opened a can of pumpkin earlier this week to make pumpkin bars and had a little bit left over. Didn't want to throw it away. So I'm going to make some scones with it. So first of all I have two and a half cups of all purpose flour in here. And then I want a half of a cup of brown sugar. Now mine is this Splenda Zero Sugar. Zero calorie sweetener. And I'm going to put that So a half a cup. You can use regular brown sugar. You don't have to do this. I want two teaspoons of cinnamon. Okay, two teaspoons of cinnamon. I want two teaspoons of pumpkin pie spice. Sometimes I put nutmeg in it. I'm not a big fan of nutmeg so I'm not going to put that but I'll go ahead and put it in the recipe as optional if you like nutmeg. I want a half of a teaspoon of salt. And a tablespoon of baking powder. And I'm going to whisk that all up together so it's mixed in good now I'm going to mix my wet ingredients so that will be the three fourths of a cup of pumpkin. This is not the pumpkin pie mix. This is just the pumpkin puree that you buy in a can. And I want about a third of a cup of milk. I'm using buttermilk. You can use either. I would suggest either whole milk or half and half if you're not using buttermilk and I want some vanilla. I want a teaspoon of vanilla and I'm done with the whisk in there so I'll whisk this together. And I'll set this aside. I have a half of a cup butter, cold butter that I cut up into little squares and I'm going to put that in here next. But you want to get it blended in there so that there's no big chunks Alright. Now, I'm going to mix the pumpkin, buttermilk, and vanilla into the dry ingredients. And we'll give that a mix. And I may need more buttermilk to really mix this up good. I usually do need more than a third of a cup I've tried to mix this up and it's really dry so I'm going to put little bit more of the buttermilk in it couple tablespoons and keep mixing till it comes together. Alright before I mix that up completely I have a fourth of a cup of chopped pecans. And I have a half of a cup of sugar free chocolate chips. You can use regular. I just have these Hershey's zero sugar so I decided to use those. Smells so good. I Wanna be able to knead this a little bit and mix the nuts and chocolate chips in real well. Okay. That's a nice Alright I have a parchment lined baking pan here. And I have my cutter here, bench scraper. You're going to use that to cut them with. Put these onto this my baking sheet I'm going to set this in the freezer for about 15 minutes before I bake them and then I'm going to bake them in a 425 degree oven for oh fifth 13 to 15 minutes. Mine usually take just a little bit longer but I will show you when they're done. Okay, the scones are done. They bake really nice and I'm getting ready to put a glaze on them and boom and glaze. Got a measuring cup here. I'm going to put a half of a cup of powdered sugar in here Uh you don't have to be exact. But about a half cup. And then you want just all just a couple shakes of cinnamon I'm not even going to measure it with a spoon I'm just going to shake a little bit in here just enough to give it a cinnamon flavor about a half of a teaspoon of vanilla and couple of teaspoons of milk and I'm using this butter milk that I have on hand. I'll put two teaspoons in and we'll go from there. And just mix that all up. That looks good and I'm just going to slowly drizzle that on these. I may need to make more. I don't know. We'll see. Okay there they are. As soon as this sits for a little bit then we'll try one with a cup of coffee.
