This salad makes for a great side dish but I also love enjoying it as a snack with some corn chips 🤤 Ingredients: 1 Lebanese cucumber, diced 1 can (375g) chickpeas, rinsed and drained 1 punnet of cherry tomatoes, diced 1/2 a red onion, diced 1 avocado, diced Coriander, finely chopped Dressing A drizzle of olive oil Salt Juice of half a lemon Add everything to a salad bowl.
