How To Score Sourdough - Scoring Tip! • I always go for a long proof in the fridge overnight. This allows the dough to get firm enough so scoring is easier. • Lightly dust the top of the dough with rice flour. Try to get the sides as well. Rice flour won’t scorch in the oven and keeps that nice contrast between the bread and the design. • Use a bread lame, which is basically a really sharp blade. I like the circular ones because I feel like I have more control over the blade. I switch the blade every couple of loaves to keep it making sharp cuts. • You could pre-plan your design on paper or even use twine to map out where to cut.
