I know that a lot of budgetfriendly meals rely heavily on bread, pasta, and potatoes and my recipes are no exception to that. But I also wanted to share some affordable meals for those who have to restrict or watch their carb intake. The second recipe I made was one that was totally new to me. This is a broccoli cauliflower Alfredo Chicken Bake Thing. Yeah. That's what we should call it. It's actually called a Chicken Alfredo cauliflower rice bake. I did not look that up real quick. This one has about 21 grams of carbs per serving, a little under six grams of fiber per serving, assuming that it serves 4 people. I started with the broccoli. For me, this is kind of assessing the damage because Dollar Tree frozen vegetables are not the best. Sometimes I get people that think I am paid by or associated with Dollar Tree, I am neither and if I could plead them to do anything, it would be to change their manufacturer for their frozen vegetables because for the dollar twenty-five price, they are not a good quality. You can usually get a lot higher quality vegetables elsewhere for the same price if not cheaper. Honestly this bag wasn't terrible. I had a couple of these big floret pieces and then the rest were stem pieces. I do have to kind of cut away some of the more woody bits of the broccoli that I consider to be hard to chew. Um so that's essentially I'm going through and doing here is just chopping down in the smaller pieces and assessing. If my knife doesn't go through it very easily I know my teeth won't. After I had prep broccoli, the rest of this is totally dumpandbake. I have a casserole dish here. I went with my broccoli. My cauliflower rice is thawed and to get out as much of the moisture as I could, I did wring it out using a dish towel. I guess I should specify a clean dish towel. Into this goes my two cans of chicken that were also well drained, my can of Alfredo sauce and once I had mixed this all together, I topped it with my shredded mozzarella cheese. I decided at the last minute to add some grated parmesan cheese and then I crushed up some of my vegetable crackers right over the top. This goes into the oven to bake 400 degrees for about 25 to 30 minutes or so. I did keep an eye on the crackers and once they started to get brown, I tinted the top of it with some aluminum foil so it didn't brown further. This is very similar to a meal I used to make back when I was struggling financially so I'm very familiar with all of the flavors that are going on here. Using cauliflower rice was a bit of a change for me but I actually pleasantly enjoyed it in this dish. I think it worked really well and I'm not even low carb and I enjoyed this so I definitely think it's a good recipe to try.

Chances are you've had... | By Dollar Tree Dinners | Feel like it's been forever since I shared an actual recipe and I asked you all for your favorite struggle meals and goulash came up a lot. So of course I had to make a Dollar Tree goulash. Now to preface this, some people call this goulash. Some people call it chopsuey or beeferoni. This is a seven dollar and 50 cent dinner to feed four people with leftovers and honestly that's a bargain no matter what you call it. I started with two beef patties that were thawed. Each of these patties is eight ounces so it's about a pound total. And I browned and crumbled those over meaty high heat and when it comes to these beef patties specifically, I do like to rinse them to remove extra salt and seasoning and give them a more neutral flavor because they're a pre-seasoned burger patty. Then I added one bag of frozen seasoning blend. This is a frozen mix of diced onions, peppers, and celery and I saute those together for a few minutes. Then I added in a can of diced tomatoes with the liquid and a can of Hunt's garlic and herb pasta sauce. Most of the recipes I found called for tomato sauce and a variety of seasonings. You guys know my philosophy is less cost less money. So I substituted this with pasta sauce because it's already tomato sauce and a variety of seasonings. And now depending on your perspective this part is either blasphemy or genius. I'm using macaroni and cheese because it's the same price as regular macaroni and plus you get the added benefit of the cheese. So you can use two of these smaller boxes if you have those or I use one family size box. I dumped in the noodles but not the cheese packet yet. And then I covered this with four cups of water but of course you can use broth or bouillon powder if you have it. Stir this all together and then bring it up to a boil. Reduce your heat to low. Cover and simmer for 10 minutes. Stop and stir once or twice to make sure nothing is sticking to the bottom. Chuck a noodle to make sure it's cooked and then stir in your cheese powder. Taste it for seasonings and add any additional seasonings you like. I just added salt and pepper to taste. And I feel like garlic bread would have been the perfect side. You can also do bread and butter like I did. But overall this was a delicious and hearty meal that made a superb amount of food for the price. So huge thank you to everyone who suggested goulash. This was a really fun one to make and I really enjoyed this dinner.

I actually make these all the time not necessarily because they are low carb but because I love them especially topped with some hot sauce or ketchup they are a perfect make ahead breakfast and they are also very freezer friendly. To make these all you need is eggs, deli ham and cheese. Grease a muffin tin with some oil or cooking spray. I didn't grease mine and I regret that. So do as I say not as I do then press one piece of deli ham into each of the tins. I crack each of my eggs directly into the ham cups but this is just the basic recipe. So if you wanted to add some veggies, you can scramble your eggs instead and mix in some asparagus, broccoli, spinach, peppers, onions, really anything you'd enjoy in an omelette or frita would be great in these. I season the top of each with some black pepper. I didn't add any salt personally and then I topped each one with some shredded cheddar cheese and I baked them at 400 degrees for 15 minutes. Unmold each of your little egg cups with a spoon and enjoy as I mentioned, I like them topped with ketchup or hot sauce. I went with hot sauce today because I found this big bottle of Louisiana hot sauce at Dollar Tree and it's pretty on par with Texas Pete.

I grew up in North Carolina where I'm used to chicken and dumplings looking like this. But it turns out that a lot of you are more used to chicken and dumplings that look like this. So that's the version I made today. In a soup pot over medium high heat with a tablespoon of oil I added in a bag of frozen seasoning blend and a bag of carrots and butter sauce. I sauteed my vegetables for a few minutes before I added in two cans of chicken, a half teaspoon of thyme and to taste. I also added a can of cream of chicken soup and I filled that can up twice with chicken broth and added that in as well. Continue to taste as you're cooking and feel free to add more thyme and pepper as needed but air on the side of caution when it comes to adding salt because the biscuit dough we're adding is quite salty. I also decided that it needed a bit more creaminess so I added in half a block of cream cheese and stirred that until melted. For the dumpling dough, mix a packet of buttermilk biscuit mix with one half cup plus an additional two tablespoons of water. Once your soup base is boiling, add small spoonfuls of your prepared biscuit dough into your boiling soup base. Reduce your heat to low, cover with a lid and allow it to simmer for 20 minutes. Here's our finished chicken and dumplings. I let it rest for 10 minutes before I served it. This meal was creamy and comforting and so filling. I couldn't get enough of it. I had two bowls last night and I'm excited to have leftovers today. I did go a little bit over budget because I decided to add the cream cheese in at the end there. So it came out to 11 twenty-five for four servings but it was so delicious. I would not have changed a thing. I do hope you guys try this one.

So first let's head to the store and grab a box of penne pasta, a can of pasta sauce, Velveeta cheese sauce, a can of chili, a box of hashbrowns, frozen meatballs, pepper stir fry, and some smoked sausage. That is all the ingredients you need and it should come out to $10 plus tax if your state charges tax on food. These meals are very easy to make. So I'm going to start off by boiling my entire box of penne pasta. Now I do recommend undercooking the pasta since we're going to be reheating it later. When making pasta in advance after it's been cooked and drained, toss it in about three to four tablespoons of oil. This will prevent your pasta from getting dried out but also stop it from absorbing all these sauce. These Dollar Tree boxes of pasta are 20 ounces not your standard 16 ounces. So you're going to split this between nine containers. It's about a cup and a half of pasta per container. The next thing to prep is the hashbrowns so rehydrate them as per the box instructions and then I fry them in vegetable oil for about five to six minutes per side until they're crispy. Your hashbrowns will get divided between three containers. Now moving on to the toppings, the frozen pepper and onion stir fry can get chopped into smaller pieces and then make sure this is thawed and drained. I also sliced my smoked sausage into rounds. Sautee these together over a medium high heat until they're lightly browned. I'm using the meatballs to make a meat sauce. So I'm actually cutting them down into smaller pieces and then I fry those in a little bit of oil and then I add in my pasta sauce and just let these simmer together until heated through. The last prep work is to mix the packet of Velveeta with 1/ 4 cup of hot water to make it into a cheese sauce. Now that we have all of our bases and all of our toppings prepped, I'm going to show you how to assemble these so that we get five different meals out of these same ingredients. Two of the pasta dishes will get sausage and peppers and cheese sauce. The majority of cheese sauce will go here but we'll save some for some other meals. Two of the hashbrown dishes are going to get sausage and peppers and a small drizzle of cheese sauce. Our can of chili is going to get split between two pasta dishes and one hashbrown dish and this is where we will finish off the remainder of the cheese sauce. And then the other five pasta dishes are all going to get topped with meat sauce. These can be stored in the fridge for up to five days or they can be frozen for up to three months. To microwave them, I reheat them for 90 seconds. So if payday's still a few days away and you need a lot of food for not a lot of money, here's how.

Today, we're taking instant chow mein noodles and turning them into a stir fry dinner for two. You'll need two packages of teriyaki beef chow mein, some frozen vegetables. I'm using California blend here. A package of beef patties and brown sugar. Starting with the stir fry, I opened up both packages of noodles and this particular noodle actually comes with a liquid sauce versus a powder. So, I added both of these sauce packets to a bowl along with one tablespoon of brown sugar and a cup of warm water. I stirred that until the brown sugar was dissolved. Optionally, if you have apple cider vinegar or rice vinegar, add a teaspoon to the sauce which will help brighten the sauce up. For the vegetables, I separated the carrots from the broccoli and cauliflower. I cut the carrots into match sticks and then I cut the cauliflower and broccoli into bite-sized pieces. In a saucepan, bring an inch of water up to a boil and add in both of your noodles and vegetables to this. Allow it to boil for around two to three minutes stirring to break up the noodles. Drain your noodles and then rinse them under cold water. This stops them from cooking and prevents them from sticking so we can add them to the stir fry later. Working on medium high heat, add your beef patties and brown and crumble these. Then you're going to increase the heat to high and add your frozen vegetables. Allow these to saute until all of the excess liquid has evaporated off and then you can add in your stir fry noodles from earlier. When it comes to adding these stir fry sauce, I know a lot of you were concerned about how salty instant noodles can taste so feel free to only add half of the sauce which is around a quarter cup at the beginning. You can always add more later but you can't take it away once you've added it. So start small and add more if you need to. Here's our finished beef and vegetable chow main. All that's left to do is plate this up and serve. Now I eat these kinds of instant noodles fairly frequently so I'm well adjusted to the amount of salt that comes in them and they don't really bother me much so I would have probably added the entire stir fry sauce personally but this is one of those times where you make it a quarter to your own tastes.

I think we can all agree that lentils are healthy but at least for me that means next to nothing if it doesn't actually taste good. So this is my favorite spicy sausage and lentils soup and it's part three of my diabetic friendly Dollar Tree meals. For my diabetic followers this recipe has 46 grams of carbs per serving and a whopping 21 grams of fiber. In a large pot or Dutch oven start by browning one pound of sausage. While my sausage is browning I like to add in half a tablespoon of red pepper flake. That way the fat heat can activate the chili oils but if you don't like spicy, just leave them out, you'll still have a delicious soup, I promise. Once my sausage was well brown, I added in one bag of frozen chopped peppers, onions, and celery. It's called seasoning blend. One can of diced tomatoes, one pound of brown lentils that had been rinsed, nine cups of water, you can use broth here but since you need so much, that can be a little costly. So, instead I add two tablespoons of bouillon powder. I'm using vegetable bouillon but you can use vegetable chicken beef or really any combination of the three. I also added two tablespoons of Italian seasoning and gave this all a good stir. Let this come up to a boil then cover and simmer for 1 hour. I don't like crunchy lentils, only tender lentils so a long cook time helps guarantee tender lentils. After that, your soup is done. If you have the carb allowances, feel free to serve this with some whole wheat bread or toast on the side. I think that soup and toast go really well together. This also reheats really well so feel free to freeze some of it for later.
