Rainbow Chard Fritters

Don't toss those stems! Rainbow chard is sold in bunches with a mix of yellow, pink, and pale green stems that add a pop of color, a bit of crunch, and an extra dose of fiber.

The first time I ever nibbled on a chard stem while prepping a big bunch of greens, I was blown away by the flavor of this usually-discarded bit of vegetable. Crisp and salty, chard stems are good chopped up in salads or cooked alongside chard leaves, but the recent issue of Bon Appétit suggests an even better use: spicy refrigerator pickles!The idea comes from Doug Flicker, a chef at the Minneapolis restaurant Piccolo.

Enchiladas are traditionally wheat or corn tortillas filled with meat that are then rolled and baked in a dish of spicy sauce and loaded with cheese. This healthier version uses rainbow Swiss chard leaves in place of the tortillas. The rainbow colored stems are packed with antioxidants and is hence a very nutritious addition to the dish. The sweet potato, corn, and black bean filling is delicious on its own but is made divine when paired with the silky avocado cream.
