2 tbsp English Cucumber, minced 1 Jalapeño, minced 1/4 Pink Lady apple, minced 1 tbsp cilantro, minced 1/2 cup unseasoned rice wine vinegar Lemon 3 small red onions 3 cloves of garlic, minced 2 tbsp black peppercorns 2 1⁄2 cups white vinegar 1/3 cup sugar 3 tbsp red chili flakes 3 tbsp salt
Caviar + Pickled Red Onion Oysters
• 1⁄2 red onion, finely sliced • 1 tsp sugar • 3 tbsp champagne vinegar • Pinch salt • 1 tin of caviar (we like California White Sturgeon Caviar from @californiacaviar ) Slice the onions and place in a small bowl. Add sugar, vinegar, and a pinch of salt, stir to combine. Let sit, allowing the mixture to pickle for at least 30 minutes. When you're ready to eat, shuck the oysters and place a small amount of the onion mixture on top, followed by a little dollop of caviar.
